This next recipe in the Cooking in a Hotel Room series can easily be created with an electric griddle or hotplate and skillet and a few basic items from your portable kitchen.
The first time I ever ate a Reuben was in a hotel room, with soup that had been warmed in a crock pot. I thought it was delicious meal and one I’ve since duplicated at home and on the road.
Reuben’s are a quick, filling meal that are fairly inexpensive.
To create these in the hotel room, you’ll need the following items from your portable kitchen:
a knife or spatula and a colander. You’ll also need a griddle or hotplate with a skillet.
Food Ingredients You’ll Need:
Rye Bread (I use Seedless Rye)
Thousand Island Dressing
Swiss or Provolone Cheese
Butter or Margarine
Rinse and drain the sauerkraut. Butter your bread on one side like you do for grilled cheese sandwiches (another great sandwich for cooking in a hotel room). Preheat skillet or griddle to medium or medium-high. Place the bread butter-side down and add a slice of cheese with several layers of Corned Beef. Add sauerkraut and heat until the bread is golden brown. Flip the sandwich over and heat on the opposite side until it is also golden brown. Remove the sandwich from the griddle or pan and drizzle with Thousand Island Dressing.
Serve with a salad, soup, chips or vegetables (Steamables for the microwave are perfect for cooking in a hotel room).
